Matcha 101: Ceremonial Grade vs Culinary Grade

Walk into any café menu today and you'll see "matcha" everywhere - but the powder behind the counter can vary wildly in quality. The difference between a matcha that tastes like grassy velvet and one that tastes like bitter lawn clippings usually comes down to one thing: grade.

Ceremonial grade: built to be sipped plain

Ceremonial-grade matcha is stone-milled from the youngest, shade-grown tea leaves, picked in the first harvest of the season. It's naturally sweet, vividly green, and smooth enough to drink whisked with just hot water - no sugar, no milk needed. This is the grade tea masters use in traditional Japanese tea ceremonies, and it's also what we stone-mill fresh and seal the morning it arrives at our bar.

Culinary grade: built for milk, heat, and sugar

Culinary-grade matcha comes from later harvests and older leaves. It has a stronger, more bitter, slightly astringent profile - which actually makes it a better match for baking, or for lattes loaded with milk and syrup, since it can stand up to those flavors without disappearing.

Neither grade is "better" in isolation - they're built for different jobs. The problem is when culinary-grade matcha gets served plain, or worse, gets stretched to save cost. That's when you get the bitter, chalky matcha that turns people off the drink entirely.

How to spot good matcha

Color is the fastest tell: ceremonial matcha should be a bright, almost neon jade green, not olive or yellow-brown. Smell it - it should be vegetal and slightly sweet, not musty. And ask when it was opened. Matcha oxidizes fast once exposed to air, so a bar that seals small batches and dates them is doing it right.
