The Specialty Coffee Guide: From Bean to Cup

"Specialty coffee" gets thrown around on menus a lot, but it's actually a specific standard: beans scoring 80+ points on the Specialty Coffee Association's 100-point scale, traceable back to a single farm or cooperative, and handled carefully at every step from picking to pouring. Here's what that actually means for your cup.

It starts with origin

Where a bean is grown - altitude, soil, climate - shapes its base flavor before it's even roasted. A washed Ethiopian bean might taste floral and citrusy, while a natural-processed Brazilian bean leans nutty and chocolatey. Specialty roasters buy direct from farms (or through transparent cooperatives) so they know exactly where a bag came from, not just "South America blend."

Then the roast

Roasting is where sugar and acid in the raw bean get transformed into the flavors we actually taste. Light roasts preserve more of the bean's origin character - fruitier, more acidic. Dark roasts trade origin flavor for bolder, more bitter, caramelized notes. Neither is objectively better; it depends on what you want in the cup. What matters most is freshness - beans roasted in small batches and used within a few weeks taste dramatically better than beans that sat in a warehouse for months.

Finally, the brew method

The same beans can taste like different drinks depending on how they're brewed. Espresso extracts fast and concentrated, ideal for milk drinks. Pourover (like V60 or Origami) is slower and cleaner, highlighting delicate origin notes. Aeropress sits in between - full body with more clarity than espresso. Cold brew's long, cold steep pulls out sweetness while leaving acidity behind.
